A taste from the Alps: Bresaola with cheese

Lake Como is located in the beautiful Lombardy region, close to Valchiavenna and Valtellina: two valleys in the heart of the Alps. Here, bresaola is produced.

Bresaola is a high-quality salted beef, aged following the local tradition.

​It is a very nutritious salted beef, low-fat, high in protein, iron, vitamins and minerals and highly digestible. It’s super tasty eaten inside a sandwich but it’s used as well to prepare tasty appetizers.

Our favorite one unites bresaola and cheese: fresh rolls of meat with a creamy filling!

You need about 16 slices of bresaola della Valtellina and 100 g creamy fresh cheese (could be ricotta, goat cheese, cream cheese, gorgonzola or even a mix of some of these!).

Simple as it gets: beat the cheese in a bowl using a fork, season it with salt and pepper to taste – if you’re using plain cream cheese or goat cheese, why not adding a spoonful of fresh chives – then, spread the bresaola slices on a plate and place some of the cheese filling on the edge of each slice. Roll up like cannelloni.

Serve it drizzled with olive oil, a sprinkle of freshly ground pepper and some rocket – easy peasy!
